Lauren's Granola

INGREDIENTS
DRY
2 cups steel-cut oats
1 cup tri-colored quinoa
1 cup raw pepitas
1 cup raw sunflower seeds
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1 teaspoon ground nutmeg (about half a whole nut on the microplane)
1 teaspoon salt
WET
⅓ cup coconut oil
⅔ cup honey
2 teaspoon vanilla extract
1 tablespoon apple cider vinegar
1 small to medium apple diced
4 dates diced
ADD-INS
1 cup goji berries
1 cup diced dried apricots
INSTRUCTIONS
Preheat the oven to 300 degrees.
In a large bowl combine all dry ingredients.
In an immersion measuring container, melt coconut oil in the microwave, then add the wet ingredients.
Blend well with the immersion blender then stir into the dry ingredients.
Line a large sheet pan with parchment paper and spread the granola evenly pressing down in the pan.
Cook granola for a total of 60 minutes:
Start with 20 minutes then remove pan and stir granola.
Press down in the pan and return to oven for 20 minutes.
Remove pan and stir granola, press down in the pan and return to oven for 20 minutes.
Remove from oven and stir in the add-ins and press down into the pan and let cool for an hour before storing.
STORE
Lasts 2 weeks in an air tight container
